TRAINING OF THE VINE : guyot pruning , the vigor is naturally controlled by the age of the vine.
YIELD : 30 hl/ha
HARVESTING : Manual, at full maturity. The harvesting date is decided according to the degree, the acidity and the sanitary conditions of the different parcels (on average, beginning of Octobre). Concentration: 12.5 to 13.5 %vol.
WINE MAKING PROCESS : Sorting out the berries, then destemming. Maceration between 21 and 30 days.
MATURING : Maturing in new oak barrels during 12 to 18 months. Then, barrells are tasted one by one to select to best wines.
TASTING : Dark ruby color, black fruits (prune), spices (pepper) and vanilla aromas. Ample and fleshy attack with good tannins. This wine can be kept 2 to 3 years for a better harmony.
WINE AND FOOD :
Serve at 15-16°C with roast meat, game and cheese.
